  • 2 cups sunchokes, thinly sliced
  • 1 cup apples, thinly sliced
  • ¼ cup lemon juice
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Instructions
