Vegan Lentil Salad with Apples and Carrot

Main Ingredients
- 1 cup Green Lentils rinsed
- 2 Apples diced
- 1 Carrot grated
- ¼ cup Red Onion finely chopped
- ¼ cup Fresh Parsley chopped
- 3 tablespoon Olive Oil
- 2 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper freshly ground
1. Cook the lentils in a pot of boiling water for about 20 minutes or until tender. Drain and let cool.
2. In a large mixing bowl, combine the cooked lentils, diced apples, grated carrot, chopped red onion, and parsley.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
4. Pour the dressing over the lentil mixture and toss to combine.
5. Serve immediately or refrigerate for later.
