Main Ingredients
- 2 tablespoon Coconut Oil
- 1 cup Chopped Onions
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 tablespoon Yellow Curry Paste
- 1 cup Coconut Milk
- 1 cup Vegetable Broth
- 1 cup Chopped Bell Peppers
- 1 cup Chopped Zucchini
- 1 cup Chopped Cauliflower
- 1 tablespoon Soy Sauce
- 1 tablespoon Lime Juice
- to taste Salt and Pepper
Heat the coconut oil in a large pot over medium heat.
Add the chopped onions and sauté until translucent.
Add the minced garlic and ginger, cook for another minute.
Stir in the yellow curry paste and cook for 2 minutes.
Add the coconut milk and vegetable broth, bring to a simmer.
Add the chopped bell peppers, zucchini, and cauliflower. Cook until vegetables are tender.
Stir in the soy sauce and lime juice. Season with salt and pepper to taste.
Serve hot and enjoy!
