Ingredients

  • 2 cups Gluten-free flour
  • 1 cup Sugar
  • 1 cup Orange juice freshly squeezed
  • ½ cup Coconut oil melted
  • 2 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, combine the orange juice, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
