Thai Cucumber Salad
A refreshing Thai cucumber salad with a tangy dressing.

Main Ingredients
- 2 large Cucumbers sliced thin
- 1 small Red Onion sliced thin
- ¼ cup Rice Vinegar
- 2 tablespoon Sugar
- 1 teaspoon Salt
- 1 tablespoon Chopped Fresh Cilantro
- 1 tablespoon Chopped Fresh Mint
In a mixing bowl, combine the rice vinegar, sugar, and salt. Stir until the sugar and salt are dissolved.
Add the sliced cucumbers and red onion to the bowl. Toss to coat with the dressing.
Sprinkle with chopped cilantro and mint. Toss again to combine.
Serve immediately or refrigerate for up to 2 hours before serving.
