Ingredients 

Main Ingredients

  • ½ cup bulgur wheat fine or medium grind
  • 1 bunch parsley finely chopped
  • ½ bunch mint finely chopped
  • 2 medium tomatoes diced
  • 1 small onion finely chopped
  • ¼ cup lemon juice freshly squeezed
  • ¼ cup olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Soak the bulgur in hot water for about 15 minutes or until tender. Drain well.
  2. 2. In a large mixing bowl, combine the chopped parsley, mint, tomatoes, and onion.
  3. 3. Add the drained bulgur to the bowl and mix well.
  4. 4. Pour the lemon juice and olive oil over the mixture. Season with salt and black pepper to taste.
  5. 5. Toss everything together until well combined. Serve chilled or at room temperature.
