Sweet Potato Potato Salad Recipe

Main Ingredients
- 2 large sweet potatoes peeled and cubed
- 2 medium potatoes peeled and cubed
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 stalks celery chopped
- ¼ cup red onion finely chopped
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Boil sweet potatoes and regular potatoes in a pot until tender, about 15 minutes. Drain and let cool.
2. In a mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
3. Add the cooled potatoes, celery, and red onion to the bowl. Mix well to combine.
4. Chill in the refrigerator for at least 1 hour before serving.
