  • 4 ears Corn, cooked and cut off the cob
  • 1 cup Cherry tomatoes, halved
  • 1 Avocado, diced
  • ¼ cup Red onion, finely chopped
  • ¼ cup Cilantro, chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. In a large mixing bowl, combine the corn, cherry tomatoes, avocado, red onion, and cilantro.
  2. 2. Drizzle with olive oil and lime juice. Season with salt and black pepper.
  3. 3. Toss everything together until well combined. Serve immediately or chill in the fridge until ready to serve.
