  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ¼ teaspoon Salt
  • ½ cup Unsalted butter, softened
  • ¾ cup Brown sugar
  • 2 Large eggs
  • ¼ cup Greek yogurt
  • 1 teaspoon Vanilla extract
  • 3 Ripe bananas, mashed
  • 1 cup Strawberries, diced
  • ½ cup Chopped nuts (walnuts or pecans)

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, cream the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Mix in the Greek yogurt and vanilla extract. Stir in the mashed bananas until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the diced strawberries and chopped nuts.
  6. Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
