Spicy Low Carb Eggplant with Beef and Tomatoes

Main Ingredients
- 1 large eggplant cubed
- 1 lb ground beef
- 2 cups diced tomatoes canned or fresh
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon chili flakes adjust to taste
- to taste salt and pepper
Heat olive oil in a skillet over medium heat.
Add chopped onion and minced garlic. Sauté until translucent.
Add ground beef and cook until browned.
Add cubed eggplant and cook until soft.
Add diced tomatoes and chili flakes. Stir well.
Season with salt and pepper to taste. Simmer for 10 minutes.
Serve hot.
