Smashed Cucumber Salad

Main Ingredients
- 2 large cucumbers
- 1 teaspoon salt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 clove garlic, minced
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds toasted
1. Cut the cucumbers in half lengthwise and remove the seeds.
2. Place the cucumbers cut-side down on a cutting board and smash them with the flat side of a knife.
3. Cut the smashed cucumbers into bite-sized pieces and place them in a mixing bowl.
4. Add the salt to the cucumbers and let them sit for 10 minutes.
5. Drain any excess liquid from the cucumbers.
6. In a small bowl, mix the rice vinegar, soy sauce, sugar, garlic, and sesame oil.
7. Pour the dressing over the cucumbers and toss to coat.
8. Sprinkle with toasted sesame seeds before serving.
