Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 2 cups water
  • ½ cup chopped fresh parsley
  • ½ cup chopped fresh mint
  • ¼ cup chopped red onion
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Rinse the lentils under cold water.
  2. In a pot, bring water to a boil and add lentils.
  3. Reduce heat and simmer for 15-20 minutes until tender.
  4. Drain and let cool.
  5. In a bowl, combine lentils, parsley, mint, red onion, olive oil, lemon juice, salt, and pepper.
  6. Mix well and serve.
