Instructions
Rinse the lentils under cold water.
In a pot, bring water to a boil and add lentils.
Reduce heat and simmer for 15-20 minutes until tender.
Drain and let cool.
In a bowl, combine lentils, parsley, mint, red onion, olive oil, lemon juice, salt, and pepper.
Mix well and serve.
