Main Ingredients
- 200 g Pasta any shape
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- 1 cup Bell Peppers diced, any color
- ½ cup Red Onion thinly sliced
- ½ cup Black Olives sliced
- ¼ cup Feta Cheese crumbled
Dressing
- ¼ cup Olive Oil
- 2 tablespoon Red Wine Vinegar
- 1 teaspoon Dijon Mustard
- 1 clove Garlic minced
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
Cook pasta according to package instructions. Drain and rinse under cold water.
In a large mixing bowl, combine pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and feta cheese.
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
Pour dressing over pasta salad and toss to combine.
Chill in the refrigerator for at least 30 minutes before serving.
