Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Butter, melted

Filling

  • 24 oz Cream cheese, softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 3 Eggs
  • 1 cup Crushed pineapple, drained

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, beating well after each addition. Stir in crushed pineapple.
  4. Pour filling over crust. Bake for 60 minutes or until center is set.
  5. Allow to cool, then refrigerate for at least 4 hours before serving.
