Low Carb Chicken and Mushroom Soup

Main Ingredients
- 2 tablespoon Olive Oil
- 1 lb Chicken Breast, diced
- 8 oz Mushrooms, sliced
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 4 cups Chicken Broth
- 1 cup Heavy Cream
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Parsley, chopped
Heat olive oil in a large pot over medium heat.
Add diced chicken and cook until browned.
Add mushrooms, onion, and garlic. Cook until vegetables are tender.
Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
Stir in heavy cream, salt, and pepper. Simmer for another 5 minutes.
Garnish with fresh parsley before serving.
