- 1 lb Ground Beef
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 tablespoon Olive Oil
- 2 cups Beef Broth
- 1 cup Heavy Cream
- 1 can Diced Tomatoes (14.5 oz can)
- 1 packet Taco Seasoning
- 1 cup Shredded Cheddar Cheese
- to taste Salt and Pepper
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and minced garlic, cook until softened.
3. Add ground beef, cook until browned. Drain excess fat.
4. Stir in beef broth, heavy cream, diced tomatoes, and taco seasoning. Bring to a boil.
5. Reduce heat and simmer for 20 minutes.
6. Stir in shredded cheddar cheese until melted. Season with salt and pepper to taste.
