Ingredients 

Main Ingredients

  • 4 large bell peppers tops cut off and seeds removed
  • 1 lb ground beef
  • 1 cup cauliflower rice
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup tomato sauce

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add cauliflower rice, garlic powder, onion powder, salt, and black pepper to the skillet. Cook for 5 minutes.
  4. Stir in tomato sauce and half of the shredded cheese. Cook until cheese is melted.
  5. Stuff each bell pepper with the beef mixture and place in a baking dish.
  6. Top each stuffed pepper with remaining cheese.
  7. Bake in preheated oven for 25-30 minutes, until peppers are tender and cheese is bubbly.
