Base
- 1 cup Almond Flour
- ¼ cup Coconut Flour
- ¼ cup Erythritol
- ½ cup Butter, melted
Filling
- 3 Large Eggs
- ½ cup Lime Juice
- ½ cup Coconut Cream
- ½ cup Erythritol
- 1 tablespoon Lime Zest
Preheat oven to 350°F (175°C).
In a mixing bowl, combine almond flour, coconut flour, erythritol, and melted butter. Press into a baking pan to form the base.
Bake the base for 10 minutes, then let it cool.
In another bowl, whisk together eggs, lime juice, coconut cream, erythritol, and lime zest. Pour over the cooled base.
Bake for another 20 minutes or until the filling is set. Let it cool before cutting into bars.
