Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini diced
  • 1 can diced tomatoes (14.5 oz)
  • 6 cups vegetable broth
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 cup pasta (small shapes like ditalini or elbow)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 2 cups baby spinach

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the carrots and celery, and cook for about 5 minutes.
  4. Stir in the zucchini, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Add the kidney beans, pasta, oregano, and basil. Reduce heat and simmer for 10-15 minutes, or until the pasta is tender.
  6. Season with salt and pepper to taste.
  7. Stir in the baby spinach and cook until wilted, about 2 minutes.
  8. Serve hot and enjoy!
