Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini diced
- 1 can diced tomatoes (14.5 oz)
- 6 cups vegetable broth
- 1 can kidney beans (15 oz), drained and rinsed
- 1 cup pasta (small shapes like ditalini or elbow)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- to taste salt and pepper
- 2 cups baby spinach
Heat olive oil in a large pot over medium heat.
Add the onion and garlic, and sauté until the onion is translucent.
Add the carrots and celery, and cook for about 5 minutes.
Stir in the zucchini, diced tomatoes, and vegetable broth. Bring to a boil.
Add the kidney beans, pasta, oregano, and basil. Reduce heat and simmer for 10-15 minutes, or until the pasta is tender.
Season with salt and pepper to taste.
Stir in the baby spinach and cook until wilted, about 2 minutes.
Serve hot and enjoy!
