Ingredients 

Fish Tacos

  • 1 lb white fish fillets like cod or tilapia
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 8 small corn tortillas

Mango Salsa

  • 1 cup diced mango
  • ¼ cup diced red onion
  • 1 jalapeño, seeded and minced
  • ¼ cup chopped cilantro
  • 1 tablespoon lime juice
  • ¼ teaspoon salt

Instructions 

  1. 1. In a small bowl, mix together chili powder, cumin, and garlic powder. Rub the spice mixture over the fish fillets.
  2. 2. Heat olive oil in a skillet over medium-high heat. Cook the fish for about 3-4 minutes on each side, until it flakes easily with a fork.
  3. 3. In a mixing bowl, combine mango, red onion, jalapeño, cilantro, lime juice, and salt. Toss to mix well.
  4. 4. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  5. 5. Assemble the tacos by placing pieces of fish on each tortilla and topping with mango salsa. Serve immediately.
