Ingredients 

Main Ingredients

  • 2 cups Gluten-free flour
  • 1 teaspoon Baking soda
  • 1 tablespoon Ground ginger
  • 1 tablespoon Ground cinnamon
  • ½ teaspoon Ground cloves
  • ½ teaspoon Salt
  • ½ cup Coconut oil, melted
  • ¾ cup Molasses
  • ¼ cup Coconut sugar
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the gluten-free flour, baking soda, ground ginger, ground cinnamon, ground cloves, and salt.
  3. In another bowl, combine the melted coconut oil, molasses, coconut sugar, and vanilla extract. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Roll out the dough on a lightly floured surface to about ¼ inch thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
  6. Bake for 8-10 minutes, or until the edges are lightly browned. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
