Ingredients 

Cake Ingredients

  • 2 cups Gluten-free flour blend
  • 1.5 cups Sugar
  • 1 cup Buttermilk
  • 1 cup Vegetable oil
  • 2 large Eggs
  • 2 tablespoon Red food coloring
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • 1 teaspoon White vinegar
  • ½ teaspoon Salt

Frosting Ingredients

  • 8 oz Cream cheese softened
  • ½ cup Unsalted butter softened
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the gluten-free flour, sugar, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, oil, eggs, red food coloring, vanilla extract, and vinegar.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
  8. Frost the cooled cakes and enjoy!
