  • 1 lb Chicken Thighs cut into bite-sized pieces
  • 1 lb Andouille Sausage sliced
  • 1 cup Onion diced
  • 1 cup Bell Pepper diced
  • 1 cup Celery diced
  • 4 cloves Garlic minced
  • 1 cup Tomatoes diced
  • 4 cups Chicken Broth gluten-free
  • ½ cup Gluten-Free Flour
  • ½ cup Vegetable Oil
  • 2 teaspoon Cajun Seasoning
  • 2 pcs Bay Leaves
  • to taste Salt
  • to taste Black Pepper
  • ¼ cup Green Onions chopped, for garnish
  • ¼ cup Fresh Parsley chopped, for garnish

Instructions 

  1. 1. In a large pot, heat the oil over medium heat. Add the gluten-free flour and stir constantly to make a roux. Cook until it turns a dark brown color.
  2. 2. Add the diced onion, bell pepper, and celery to the roux. Cook until the vegetables are tender.
  3. 3. Stir in the garlic and cook for another minute.
  4. 4. Add the chicken and sausage to the pot. Cook until the chicken is browned.
  5. 5. Pour in the chicken broth and add the tomatoes, Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil.
  6. 6. Reduce the heat and let it simmer for about 45 minutes, stirring occasionally.
  7. 7. Remove the bay leaves. Serve hot, garnished with green onions and parsley.
