Ingredients

  • 1 cup Grated Carrots
  • 1 cup Gluten-Free Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Cinnamon
  • ¼ teaspoon Salt
  • 1 cup Milk
  • 1 large Egg
  • 2 tablespoon Maple Syrup
  • 2 tablespoon Coconut Oil melted

Instructions 

  1. In a mixing bowl, combine the grated carrots, gluten-free flour, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together the milk, egg, maple syrup, and melted coconut oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a frying pan over medium heat and lightly grease with oil.
  5. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
