  • 4 tablespoon Butter unsalted, cut into pieces

Instructions 

  1. In a saucepan, whisk together lime juice, lime zest, sugar, and eggs.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  3. Remove from heat and stir in butter until melted and smooth.
  4. Pour the curd into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Let it cool completely.
