- 3 Limes zested and juiced
- ½ cup Sugar
- 3 Eggs large
- 4 tablespoon Butter unsalted, cut into pieces
In a saucepan, whisk together lime juice, lime zest, sugar, and eggs.
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
Remove from heat and stir in butter until melted and smooth.
Pour the curd into a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Let it cool completely.
