Fresh Apricot Cobbler

Filling
- 6 cups fresh apricots, pitted and sliced
- 1 cup sugar
- 2 tablespoon lemon juice
Topping
- 1 cup all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 pinch salt
- 1 cup milk
- ½ cup butter, melted
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine apricots, sugar, and lemon juice. Pour into a baking dish.
In another bowl, mix flour, sugar, baking powder, and salt. Stir in milk until just combined. Pour over the apricot mixture.
Drizzle melted butter over the batter.
Bake for 40 minutes or until golden brown. Serve warm.
