Main Ingredients
- 4 ears Corn shucked
- ¼ cup Mayonnaise
- ¼ cup Cotija Cheese crumbled
- ¼ cup Cilantro chopped
- 1 tablespoon Lime Juice freshly squeezed
- 1 teaspoon Chili Powder
- 1 clove Garlic minced
- to taste Salt
- to taste Pepper
1. Preheat your grill to medium-high heat.
2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
3. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cob and place them in a large mixing bowl.
4. Add the mayonnaise, Cotija cheese, cilantro, lime juice, chili powder, garlic, salt, and pepper to the bowl. Mix well to combine.
5. Serve immediately or refrigerate until ready to serve.
